ZUCCHINI-CHIA-BANANA CHEWS
zucchini - at least 1 lb. Monster zucchinis are great for this.
chia seeds - at least 4 oz. - more is better. I get mine from RawFoodWorld.com @ Ojai, CA
bananas - brown & squishy like you’d use for banana bread - at least 1 lb. & I like it best if the amounts of zucchini & banana are about equal.
2 tsps cinnamon & of cloves; 1 tsp ginger
Optional: When I have an excess of apples, buffalo berries, etc., I add in some of that, too. Chia seeds will gel an amazing amount of liquid while adding fiber & protein.
Peel the zucchini & cut into food mill-size pieces; then run through your food mill or blender. I don’t seed them; the seeds are good for you, providing fiber, enzymes, etc.
Mash the bananas with a potato masher or run through the food mill. “Brown’ bananas are sweeter than those you’d put in cereal & they mash more easily.
Mix these 2 together thoroughly, then add the chia seeds & spices & mix thoroughly together again. Let sit 10 minutes so the chia seeds can absorb the liquid & it all makes a gelled mush.
Drop by teaspoonfuls onto waxed paper & put in dehydrator until as dry as you like them, OR onto cookie sheets you have sprayed so they won’t stick & dry in the oven on lowest setting. Store in brown paper bags in cool place or in freezer - they will always stick together if you leave them at room temperature. If they last that long.
If you are interested in solar drying, put the waxed paper on window screens with a screen over the top so flies can’t get at them & set them in a sun-warmed place until they’re dry.
